Afa and her friend have been long engaged in the production of sweet stuff. They have called their small company the ‘Taste of Friendship’.
‘Few people in Azerbaijan know what ‘crêpes’ and ‘pancakes’ are. They are accustomed to traditional dough-meat food, like Kutabs. Once an elderly woman came and asked us: ‘What do you stuff Kutab with?’ We wanted to explain what it was all about, but she was unrelenting: since we stuffed flatbread with something it was definitely Kutab. She, however, refused to taste ‘Kutabs without meat’.
